Things have finally started to warm up around here and boy are we glad! Subzero temperatures were definitely starting to get a little old. Of course that doesn’t mean Spring is right around the corner, but at least we can be a little more hopeful.
My week of cooking went mostly well, with just a couple of issues. My ‘Taco Pie’ recipe ended up with the same problem as my ‘Biscuit Pizza Bake’ recipe from a few weeks back. While the biscuits never fully cooked in the pizza bake, the crescent rolls (the “pie” part) never fully cooked either! I am starting to wonder what is wrong with me when it comes to pastries in a can.
My other new meal for the week (Thai Noodles) was a big hit. I got to use my Wok (as explained in last week’s Mission: Appliances) and rice noodles were involved (something I’ve only ever eaten in restaurants). The flavor was excellent, but I’m going to need to hold back a little on the spice factor next time—HOT! I ended up putting in 2 random jalapeño peppers that were getting old in my fridge in addition to the red hot chili sauce the recipe called for. It wasn’t unbearable, but next time we’d like it a little milder.
Other than those two hiccups, it was a great week! Perhaps one day I’ll have a perfect cooking week…dream on, right?!
